Food contact suitability - Knife with inox steel blade


The objective was to evaluate the food contact suitability of a knife with inox steel blade. According to the Italian regulation-compliant if the material meets the requirements of DM 21/03/1973 and DM21/12/2010 Ranked # 258 (Discipline hygiene of packaging, containers and utensils intended to come into contact with foodstuffs or with substances for personal use).
 
By migration testing we went then to evaluate the content of chromium, nickel and manganese released from the blade of the knife.
 
Limit values​​: Cr <0.1 ppm - Ni <0.1 ppm-Mn <0.1 ppm
